My PSU roomie!!
I got to spend a very quick weekend with my roommate from Pitt State! We had the BEST time catching up and talking about our fun college days! |
We stayed up rocking out to 80's music. So fun! |
I can't believe we actually got up and went hiking this morning! It was a beautiful morning and a great time. Thanks for coming to see us Mike and Nicole. I miss you already! |

Happy Birthday Mackenzie!
Can you believe she is 14 today? I can't. Yet, she is growing up to be a pretty sweet and caring young lady. Tonight we are going to The Cheesecake Factory, yum! Mackenzie wanted me to make Grandma Katy's poke cake, so I made a strawberry one. It is such a good light cake. She got lots of balloons and candy and birthday wishes from friends, family and even her boyfriend, Chance. She is a pretty happy 14 year old! :)

Basketball and Cheer Banquet
The cheerleaders were recognized at their sports banquet last week. The girls also received a medal for placing 3rd in the cheer competition a couple weeks ago.

Ghnocci, Wine and stuffed eggplant
Heather came over today for some fun and cooking. She made her grandma's gnocchi ( dumplings made of flour and potato and egg. I made a stuffed eggplant and she brought ingredients to help out with both plus she brought her dog Bo ( Coppers hiking buddy and "true love" according to Marcus. We had so much fun. Mac put on 80's music and it was quite the party. Heather's daughter Sarah came just in time to try our dinner. Mac even made the cream cheese with marshmallow cream to dip strawberries in! Great day and a great time.

Market on the Move
Today I went to Markets on the Move. One of Heather's clients told us about it. You pay $10 and get 60 lbs of fruit and vegetables. I was trying to attach their website but my iPad won't seem to let me do it. I couldn't believe all the food you get. There is a sign posted right before you pay letting you know what you will be getting. It varies because of what's in season and what the local producers bring in. Today I got 5 giant eggplant, 3 spaghetti squash, 10 green peppers, 5 yellow peppers...a giant bag of mixed greens and tons and tons of green beans, Serrano and banana peppers and Roma tomatoes. I was totally unprepared. When I pulled up and got out to get in line I looked around and everyone had wagons and pull carts and laundry baskets....I had nothing...luckily they give you boxes but it's not exactly easy to go through a line and drag boxes when one gets full. And did I mention Heather couldn't make it but I paid $10 for her as well so I actually had to get 120 lbs of veggies!! I'll know better next time! 😊
